Lola's Cantina is a small restaurant that serves mostly Mexican food, but it has dishes from other South and Central American cuisines. She calls it Argentinian because... she's from Argentina. The menu's had some revisions due to what ingredients she can get in the Quarantine but the general idea is the same.
She employs a small kitchen staff, wait staff, and a few bus boys. Either anyone sent to her by the Riverview government, or by people that ask her directly. She currently has an NPC business manger to help her run things, but if a player character wants the job she'll take it.
